On a certain September day, you can stand on the grounds of St. Mary’s church in Olmsted Falls and smell the Atlantic Ocean.
It’s clambake day, and that briny whiff of the sea is coming from more than 100 dozen clams steaming in racks with sweet potatoes, corn and chicken.
Volunteers armed with tongs reach through the hot mist into a tub-sized stainless steel box and pluck out the bounty for each tray. A few folks carry jugs to the spigot to catch the mingled, ambrosial broth left behind.As patrons drop admission tickets into the basket in front of him, social chairman Bill Hoislbauer says clambakes are important.
“It means we’re sitting down to eat together and becoming more of a church family,” he says, “not just praying and going home.”Father Wally Hyclak agrees. After all, he’s the one who makes the sauce for the annual spaghetti dinner, St. Mary’s most productive fundraiser.
Clambakes, he says, don’t pay the bills, but as he dives into his own bowl of plump bivalves, he describes their special meaning: His own family staged one every year at his childhood home in Twinsburg.
“I still have my father’s copper kettle,” he said. “We don’t do clambakes anymore but once a year my sister uses the kettle to make my dad’s clam chowder for everyone.
“It’s just something we’ve always done.”
Clams, along with other shellfish such as oysters and mussels, have a worldwide audience. But because of peak clam sales here in September and October, Northeast Ohio is considered the fall clambake capital of the country. Churches, restaurants, fire departments, neighborhoods, veterans groups, cheerleaders and ethnic groups all get into the act. One humane society calls theirs a Clambark. A gay group hosts an event where you can “Come Out of Your Shell.”
No spreadsheets document our prominence, since vendors consider sales proprietary information. But perceptions and experience among professionals who buy and sell clams runs strong. Sean Sullivan of Euro USA, who fills orders for top restaurants here, says it’s so. Ditto for John Catanese of Catanese Classic Seafood in the Flats, a retailer and the largest restaurant supplier in the area. And it’s true for John C. Young of Euclid Fish Co., a third generation fishmonger whose grandfather unloaded rail cars bearing iced-down barrels of clams from the shore.
Chesapeake Bay waterman Chad Ballard, now the largest clam producer on the East Coast, agrees with all of them. We’re the top market in the fall for his product – not Chicago, Boston or New York, which have their clambake peaks in late summer.
“From our perspective, the volume is incredible,” said Ballard. “The northeast part of the country buys all year round, going from 30 to 60 (miles per hour) during their season. Cleveland buys a few clams and then it goes 0 to 60 in the fall. You’re absolutely the fall capital.”
What gives, clam-heads?
Some attribute it to our origins as a kind of second Connecticut, since the “Western Reserve” lands in the northeast corner of Ohio were given to those veterans of the Revolutionary War. Their seaside taste for clams just moved inland.
There’s our mighty pre-election clambake ritual, when politicians use clams to lure constituents. One of them, former Cuyahoga County Sheriff Gerald McFaul, admitted in court that he illegally forced his employees to buy tickets to his bakes.
While our love for the double-shelled food has held steady, clams themselves have changed. A growing number of them – 80 percent by some estimates – are now farm-raised. In a world where farm-raised seafood has a checkered reputation, clams stand out as not just a good thing, but also a necessary one. Things have changed that much.
What has also changed is our appetite for oysters,’ which once rivaled our love for clams.
In the early 1900s, tens of thousands of gallons of oysters were consumed annually in Cleveland alone, including by families who cooked them at home.
The food section of The Plain Dealer in 1914 was filled with reader suggestions on how to prepare them: In fritters, baked, sauced, wrapped in bacon, stuffed in a loaf, deviled, panned, scalloped, in soup and chowder, a pie, a hot cocktail. (“Hot” then meaning temperature, not spice.)
“Inexhaustible seem the disguises of the festive oyster, to judge by the great variety of modes in which Women’s Exchange contributors serve the bivalve up,” read a story about a recipe contest.
The city had restaurants devoted to exclusively to shellfish menus. At a Cleveland shop called “The Ocean,” one story said, “oysters may be purchased by the barrel or hundred; bucket and count oysters by the hundred, quart or gallon.”
In an 1899 shucking contest downtown, the winners opened more than 50 oysters in about five minutes.
Clambakes had similar glory here.
In 1906, the golden-era mayor Tom Johnson showed up with 1,200 others to the Buckeye Club’s Clambake at “Giesen’s Gardens on Pearl Street,” which raised money for band uniforms for their Cedar Point appearances.
In 1900, the Fifth District Republican Club had its first clambake at its headquarters on Woodland Avenue.
Recounted The Plain Dealer: “The bake was very successful in every way and about 200, who evidently brought their appetites with them, sat down to devour the festive clam and all that is good that goes with it.”
Through the years, everyone seemed to have one, from carpenters to realtors to Kiwanis clubs.
In those days, most clams were harvested by hand rakes. Now, because of so many environmental changes, many of them are grown from egg. One-inch seedlings are sprinkled in the water and covered with netting to protect them from predators.
When full size, they are gathered by hydraulic rakes and sometimes stored to help clean out grit. Wet storage also keeps inventories high and prices regulated.
In the end, it makes clambakes seem a bit more like they always have been.
Which is fine by Father Wally.
“It’s a Cleveland thing,” he said, digging in. “They just don’t do this everywhere.”

All that was missing was the scent of sea salt in the air as dozens of chefs, restaurant owners and grocery buyers gathered Tuesday night for a sustainable seafood program sponsored by Catanese Classic Seafood, one of Northeast Ohio’s largest fish vendors.
It was, as one speaker said, “a hook-to-cook” event.Sheila Bowman of Seafood Watch, an environmental ratings system sponsored by the Monterey Bay Aquarium in Monterey, California, set the stage with some dire statistics.
“Cod, swordfish, shark, grouper and salmon – they’ve all been center-of-the-plate proteins in restaurants,” she said. Yet, we’ve taken 80 percent of these “large table-fish” out of the ocean. The buyers guide from Seafood Watch takes a look at which fish are scarce, which are taken or grown in destructive ways. Then it makes recommendations on what to buy and what not to buy. The guide has been available for years, but Bowman now heads a 20-person outreach staff designed to educate all levels of the influential food industry.
Bowman said overfishing reached its peak in the early 1990s. World War II had given the industry sonar and other equipment to find and catch fish. The harvests were huge. By 1992, the global fish population crashed. “And we haven’t seen a re-bound,” she said, “not even with more boats and better equipment.”
Pressures on the remaining fish populations and their habitats are being threatened by human population growth, she said. The industrialization of China and India has made it possible for fish to be transported to the center of those large countries, where there are many more mouths to feed.
“Other countries around the world don’t think about this like we do,” she said. Today, she said, only 9 percent of the fish we eat is caught in American waters, and 50 percent of fish eaten globally is farmed.
“We cannot all eat salmon, shrimp and tuna,” she said, encouraging chefs to try new varieties and “know the story of your favorite fish.” She gave Lake Erie perch, protected by quotas, a thumbs-up.
“There’s nothing better than a sustainable fish from your own region. . . If we all take a step in the right direction, it can have a pretty big impact.”
Jason Delacruz, fishing company owner and partner with My Gulf Wild, a New Orleans non-profit exploring the health of fisheries in the Gulf of Mexico, talked about contemporary fishing practices there. His company tags fish as they are caught, so the buyer can know its origin.
“A lot of restaurants have no idea what they’re getting,” he said, recalling a genetic test in Louisiana showing that 1/3 of the grouper sold in participating restaurants was not grouper at all. His crew signs contracts to carry out the tagging honestly, and he has installed cameras in several of his boats to monitor the processing.
Julie Watson, program director for My Gulf Wild, said she’s now staging cook-offs for chefs using lesser known fish. A similar event was held in Cleveland last week, with Doug Katz of Fire Food and Drink and Jonathon Sawyer of The Greenhouse Tavern collaborating on a “Trash Fish Dinner.”
Last up, Jason Mosley profiled his company, Verlasso, the only farm-raised ocean salmon company to be recommended by Seafood Watch. They received a “good alternative” rating, just below “best choice.”
Mosley said Verlasso got the rating in part because of its policy not to kill wildlife preying on salmon farms it runs on the coast of Chile; for not using hormones; giving fish more room to live, and for leaving farmed areas fallow for at least three months after harvest to let the ocean floor rebuild. They also use 75 percent less wild fish to feed the salmon, supplementing instead with yeasts containing Omega 3 fatty acids. It ordinarily takes 4-5 pounds of fish feed to raise a pound of salmon, he said.
“We’ve been in the market three years and we’ve saved six million pounds of feeder fish.” The brand is carried at Heinen’s supermarkets, which spearheaded the launch here. Each speaker got a warm reception.
Mike Singer, buyer for Buehler’s supermarkets, said the issue of fish sustainability is increasingly on the mind of his customers.
Dick Kanatzar, chef at Vaccaro’s Trattoria in Akron, said he’s been surprised at the wide range of fish considered sustainable. He likes the idea of fish being tagged.
“As chefs, we know how food should taste,” he said. “We don’t always know its carbon footprint.”
He’s tried Verlasso and liked it, and so have his customers. The price of Faroe Island salmon from the North Atlantic is equivalent, but he sees a big difference in environmental methods.
“It’s a no-brainer,” he said.

The bustling restaurant trade in Northeast Ohio is prompting a big expansion by the operator of Catanese Classic Seafood in Cleveland’s Flats. The food service distributor to the region’s upscale restaurants is embarking on a $1.3 million project that includes an upgrade of its riverfront fish processing facility and the purchase and renovation of a building across the street from its existing headquarters. A major impetus behind Catanese’s growth is the company’s plan to grow its fish processing business sixfold. The plan also includes growth for ancillary food service supply businesses.
Last year, Catanese began buying the catch of Lake Erie commercial fisheries that would dock at the plant on the Cuyahoga River. Company co-owner and vice president John Catanese said the company processed 100,000 pounds of lake fish this past fishing season, but he expects that figure to grow to 600,000 pounds a year once the expansion is completed.
“We are so fortunate we have such wonderful chefs here (in Northeast Ohio)” Mr. Catanese said. “As they grow, we grow.”
Marlin Investment Group LLC is co-owned by John Catanese and his brother, James, who is president. In addition to the seafood operation, they run two restaurant-related businesses called Chef Cube and Chef2Chef Foods, which import cheeses, spices, oils and products for bakers. The company also sells many of its products at three stands in the West Side Market — The Cheese Shop, Urban Herbs and Catanese Classic Seafoods.
John Catanese estimated sales for the three businesses totaled about $20 million last year. The expansion includes the purchase and renovation of a building at 1615 Merwin Ave. in the Flats and an expansion of the current headquarters at 1600 Merwin. The new building will house Chef Cube and Chef2Chef Foods.
County property records indicate Marlin Investment paid the Geist Living Trust $155,000 for the building at 1615 Merwin. The brothers opened Catanese Classic Seafood with one other employee in 2004 on Crayton Avenue on Cleveland’s East Side. The business expanded to the Flats in 2008 when the Cataneses acquired the building and assets of bankrupt State Fish Inc. for more than $1.4 million.
Included in the purchase was the 24,000-square-foot building at 1600 Merwin, where a three-story freezer and the fish processing plant are located. That purchase also brought a retail clambake business and a retail shop out front of the wholesaling operation. John Catanese said the company has about 60 employees; the expansion is expected to create 30 jobs.
The brothers have been in the seafood business since their high school days. Their father, Dominick, founded Waterfront Seafoods Inc. in 1982 and the family operated that business for nearly two decades. John Catanese said the brothers sold that business and went into the fish importing business in south Florida before starting the current business in 2004.
While a sixfold increase in processing sounds ambitious, it isn’t overly so. The commercial lake catch is primarily walleye and yellow perch. According to the Lake Erie Committee, a U.S.-Canadian agency comprised of state and provincial fishery managers, the allowable yellow perch catch in Lake Erie in 2012 was 13.6 million pounds, up from 12.6 million pounds in 2011. The walleye allocation, measured in number of fish, grew to 3.5 million in 2012 from 2.9 million in 2011.
The company’s expansion is getting some assistance from local governments. Cuyahoga County is providing a $450,000 loan for the $1.3 million project. According to county documents the loan carries a 2% interest rate and a 15-year term. The city of Cleveland is chipping in a $90,000 loan. The company has pledged to the county that the expansion will create 30 jobs. John Catanese said the growth will continue. He envisions, for example, getting back into the business of importing fish for other distributors.
“I don’t think we’ll ever be finished,” he said. “It’s exciting growing and this industry is a lot of fun.”
