The fresh water from the rivers and the salt water from the Atlantic combine to produce beautiful brackish waters which gives our Carolina white shrimp a stand out flavor that sets them apart from others. White shrimp have a sweet flavor and cooks up firm, for a subtle crunchy bite. The shrimp are very versatile, work with all kinds of seasoning and spice blends, and can be served hot or cold on any menu. Cooking methods include: boiling, frying, sauteing, steaming.

Loch Etive Ocean Trout

Loch Etive is a glacially carved 145 meter deep sea loch located along the West Coast of Scotland. It’s mix of freshwater and tidal seawater, along with fast currents, bring high oxygen levels, creating the perfect conditions to grow this amazing steelhead trout. The farm was first to be awarded Code of Good Practices Scottish Finfish Aquaculture for Trout Rearing and the first to become accredited as RSPCA Freedom Foods Assured. Being open to third-party audits holds the farm to the highest standard, the only standard that Wheeler Seafood will accept.

Per their standards, in addition to each fish receiving a nourishing diet and a spacious environment to grow, extra measures are taken to ensure that the fish enclosures are protected with a special visible top net. An on-site Health Manager ensures animal welfare, as well as continual training and oversight of safety and good husbandry for all the farming staff. Freedom foods assures fish are cared for humanely: Freedom from thirst, hunger & malnutrition, from discomfort, pain, injury, disease or distress and freedom to express normal behavior.

Ora King Salmon

The pure and isolated waters of the Marlborough Sounds enable Ora King to raise the salmon in a natural, wholesome manner, w/ sea pens being 98% water to 2% salmon.

Ora King is committed to humane harvesting techniques to ensure the process is as quick, effective and stress-free as possible. They are then transported for processing where each salmon are carefully and thoroughly washed and graded.

A Master Grader, dedicated to Ōra King, reviews each salmon against specifications for shape and condition. An individually numbered gill tag is then attached to those salmon that make the Ōra King grade, providing traceability and evidence of our product’s authenticity.

Ora King salmon have an elegant balance of sweet and umami flavours, complementing a wide variety of ingredients. The texture is buttery and soft due to its unique muscular structure and cuts well. Ora King is light in the mouth and coats the palate appealingly, making it a pleasure to eat. The high oil content naturally present in the Ōra King breed can be seen in the striking marbled fat lines within the bright orange flesh, instantly drawing comparison to Wagyu.
